beer, as well as, performing precise physical counts of each and every full bottle in the business unit. Purchases,
comps, waste and sales are all accounted for at which point numerous useful reports are generated. After reviewing these
reports, all shortages, discrepancies and other information are highlighted and presented to only the authorized personnel
for review. Our services provide confidential, accurate detailed reports and summaries which help to

Our reports compare actual profits to the potential profits based on product sales mixes, which everyone knows change constantly.

that your pour cost for the week was 20% and based on your mix of what was actually sold it should have been 18%.

Mystery Shopping
A very popular service among our clients! We actually go into a location and analyze things such as customer
service by employees, drink and or food quality and quantity, and overall compliance of the policies and standards set forth
by the establishment, and most importantly any internal theft issues. When our visit is completed we report our findings
either verbally or in writing to our clients.
Spot Checks
These are becoming much more requested in South Carolina due to the transition to larger liquor bottles and the
need for exact accuracy. We come in prior to a shift and randomly choose bottles, weigh and count them. When the
shift is complete we return weigh and count again and match up the usage to the actual sales rung in. At this point
we generate the usage reports and present them to management at which point management is either congratulating bartenders
on their performance or counseling appropriately.
